Stuffed Pumpkin: A Feast for the Hearth


At Samhain, the pumpkin isn’t just a decoration — it’s a symbol of the harvest, the womb of the earth, and the abundance we gather as the year wanes. Stuffed Pumpkin turns this seasonal icon into a centerpiece dish, hearty and beautiful enough to grace any Samhain feast.

Filled with grains, fruit, nuts, and herbs, it embodies the gifts of the land and the gratitude we hold as we step into the dark half of the year.


Magical Correspondences

  • Pumpkin – Fertility, prosperity, protection, the womb of the earth

  • Grains (rice, barley, quinoa) – Sustenance, wealth, cycles of life

  • Dried Fruit (cranberries, raisins, apricots) – Sweetness, joy, ancestral offerings

Ingredients

  • 1 medium sugar pumpkin (or small pie pumpkin)

  • 1 cup cooked rice, barley, or quinoa

  • ½ cup dried cranberries or raisins

  • ½ cup chopped nuts (walnuts or pecans)

  • 2 tbsp butter, melted

  • 1 tbsp fresh rosemary or sage, chopped

  • 1 tsp thyme

  • Salt & pepper to taste

  • Optional: ½ cup shredded cheese (Gruyère or cheddar) for a savory version


Instructions

  1. Preheat oven to 375°F (190°C).

  2. Cut the top off the pumpkin and scoop out seeds/strings (save seeds for roasting if you like).

  3. In a bowl, combine cooked grains, dried fruit, nuts, butter, herbs, and seasoning.

  4. Fill the pumpkin with mixture, packing gently. Top with cheese if desired.

  5. Place pumpkin in a baking dish with a little water at the bottom.

  6. Bake for 1–1.5 hours, until pumpkin flesh is tender when pierced with a fork.

  7. Slice into wedges and serve warm, with filling spilling out like treasure.
