Ingredients

2 tbsp olive oil or butter

1 onion, diced

2 cloves garlic, minced

3 carrots, chopped

2 parsnips or turnips, chopped

3 potatoes, cubed

1 can diced tomatoes (14 oz)

4 cups vegetable or beef broth

1 can beans (white beans or lentils) or 1 lb stewing beef

2 tsp fresh thyme

1 tsp dried sage

Salt & pepper to taste

Fresh parsley for garnish
Instructions

Heat oil or butter in a large pot. Sauté onion and garlic until golden.

Add carrots, parsnips, and potatoes. Cook a few minutes, stirring with intention.

Stir in beans (or beef), tomatoes, broth, thyme, and sage. Bring to a boil.

Reduce to a simmer. Cook 30–40 minutes (longer if using beef, about 1–2 hours until tender).

Season to taste, garnish with parsley, and serve with warm bread.
